Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-12-4    Basic - Employee beverage container in a food preparation/clean dishware area does not have a lid and a straw or equivalent dispensing mechanism to prevent hand contact with lip contact area of drink container. Drink no lid no straw on shelf over deli style reach in cooler. Open water bottles on shelf over prep table.
40-06-4    Basic - Employee personal items stored in or above a food preparation area. Cell phone on prep table in the front. Employee moved cell phone and cleaned and sanitized area. **Corrective Action Taken** **Repeat Violation**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Rear door has gap beneath. **Repeat Violation**
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Knife between reach in deli style cooler and table. Employee moved knife to dish area. **Corrective Action Taken**
33-16-4    Basic - Open dumpster lid. Employee closed dumpster. **Corrective Action Taken** **Repeat Violation**
06-05-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed in standing water. Thawing shrimp in standing water. Operator moved to sink to thaw under running water. **Corrective Action Taken**
23-14-4    Basic - Shelf under preparation table soiled with food debris.shelf under prep table in kitchen has soil residue.
23-09-4    Basic - Soiled reach-in cooler gaskets. Food debris in gaskets on reach in deli style cooler. **Repeat Violation**
08B-14-4    Basic - Stored food not covered in reach-in freezer. Chicken in reach in upright freezer not covered. Employee covered. **Corrective Action Taken**
36-26-4    Basic - Wall soiled with accumulated black debris in mop sink area. **Repeat Violation**
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. 0ppm corrected to 75ppm. **Corrective Action Taken** **Repeat Violation**
21-38-4    Basic - Wiping cloth sanitizing solution stored on the floor. Sanitizer bucket on the floor. Employee moved it to shelf. **Corrective Action Taken**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Dented cans of water chestnuts, hoisin sauce, bamboo shoots. **Repeat Violation**
08A-18-5    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in reach-in freezer - all products not commercially packaged. Raw chicken over raw beef in reach in freezer. Operator moved chicken below beef. **Corrective Action Taken** **Repeat Violation**
02C-03-4    Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. Half and half in reach in cooler in service area opened 1/21/2018 no date mark. Employee ate marked half and half. **Corrective Action Taken**
