Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-16-4    High Priority - All potentially hazardous (time/temperature control for safety) foods in walk-in cooler cold held at greater than 41 degrees Fahrenheit. Observed all food in the walkin cooler is 49f or warmer. Some food was moved to other working coolers and some put on a stop sale. **Corrective Action Taken** **Repeat Violation** **Warning**
22-42-4    High Priority - Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed employee cleaning pot and not using sanitizer. **Warning**
14-15-4    High Priority - Nonfood-grade containers used for food storage - direct contact with food. Observed dry foods are being stored in 3 large galvanized garbage cans in the dry food storeroom. **Warning**
03B-01-4    High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. Observed assorted meat filled pastries at 96-114f in a convection . The oven was turned on to reheat the pastries.. Also observed more assorted meat pastries in a hot hold box on the front counter at 100-116f. **Corrective Action Taken** **Warning**
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. Observed 1 live roach run behind the mirror in the women's bathroom. **Repeat Violation** **Admin Complaint**
35A-04-4    High Priority - Rodent activity present as evidenced by rodent droppings found. Observed approximately 30-40 dry rodent droppings on a large white dough machine. Observed 10 dry rodent droppings on the floor by the large oven in the rear of the establishment. 5 dry rodent droppings on the floor behind a upright unused oven near the kitchen. Observed 6 dry rodent droppings on another dough machine in another prep area. Observed 16 dry rodent droppings on the floor under a shelf use to store food and take out containers in the kitchen. **Repeat Violation** **Admin Complaint**
