Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Cleaned and sanitized equipment or utensils not properly stored.Clean pans and pots on the kitchen,en floor. operator sent them to the dishwasher. **Corrective Action Taken** **Repeat Violation**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. In dishwasher area. Employee threw away the coffee and moved the cup. **Corrected On-Site**
Basic - No conspicuously located ambient air temperature thermometer in reach-in cooler. The one located in front of the stove and the one next to the toaster machine.
High Priority - Employee touched face/hair and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Cook in the line.
High Priority - Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. See stop sale. noodles (65°F - Cooling overnight 10/17/17 according operator). Operator discarded immediately. **Repeat Violation**
High Priority - Raw animal food stored over ready-to-eat food in walk-in cooler. Chicken over Latin French toast. Operator placed the chicken in the right order.
High Priority - Shell eggs held at room temperature with an ambient air temperature greater than 45 degrees Fahrenheit. Ambient temperature of 83°f. ( less than 4 hrs). Operator moved them to the walking cooler. **Corrective Action Taken** **Repeat Violation**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. noodles (65°F - Cooling overnight ), liver 45°f ( more than 4 hrs). **Repeat Violation**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Most of the food. **Repeat Violation**
