Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Pork placed on the counter thawing approx 100 lbs some frozen -32°
Basic - Reach-in cooler gasket torn/in disrepair. Under the coffee maker, grill drawers both gaskets are destroyed and not sealing ( food temp violation found )
Basic - Ten (10) foot-candles of light at least 30 inches from floor not provided in walk-in cooler. Inspector needed a flash light to complete the inspection
High Priority - Employee handled soiled dishes or utensils and then handled clean dishes or utensils without washing hands. Dish washer wearing gloves rinsed them off in the dish scrap sink and began handling clean dishes with no hand wash or glove change
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Grill drawers top; beef (48°F - Cold Holding); shrimp (47°F - Cold Holding) drawers gaskets are no longer sealing the drawers . Heavy cream 47° in the make cooler **Admin Complaint**
Intermediate - Establishment advertised red snapper on the menu/menu board but served another type of fish. Product identified asCaribbean snapper on the box in the freezer the menu states a¿¿fried whole Red Snapper **Admin Complaint**
