Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed wet pans stacked on the storage shelves.
08B-39-4    Basic - Raw fruits/vegetables not washed prior to preparation. Observed employee slicing Brussels sprouts being before washed. **Corrected On-Site**
25-05-4    Basic - Single-service articles improperly stored. Observed unwrapped straws stored in bar top counter. Recommend to use per wrapped straws, or bartender handler straws to customer with napkins.
14-06-4    Basic - Wood food-contact surface not properly sealed. Observed muddle used for fruit in the bar area.
09-02-4    High Priority - Bare hand contact with ready-to-eat food while the establishment is under a foodborne illness investigation. Observed employee handling cooked lobster using her bare hands while storing on the baking sheet pans. Recommend employee to use single use gloves. **Corrected On-Site**
22-45-4    High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed soda nozzles stored standing water in the server station. Observed employee did not sanitizer spatula properly in 3 compartment sink. **Corrected On-Site**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Cooked brussels sprouts 45/47°f stored inside reach in cooler product stored inside cooler @10am recommend to quick chilled product. **Corrected On-Site**
35A-07-4    High Priority - Small flying insects in bar area. Observed two flying insects in around liquor bottles and one fly on the straws stored at bar.
22-20-4    Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. Observed edge of ice machine has mold like growth.
02C-03-4    Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. Half/ half milk stored inside walk in cooler **Corrected On-Site**
22-31-4    Intermediate - Non-pitting surface rust on food-contact equipment. Observed side panel on the interior ice machine has rust build up.
22-18-4    Intermediate - Soil residue in food storage containers. Observed mold like substance on the bottom of the ice transport bucket.
