A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Potentially hazardous (time/temperature control for safety) food thawed in standing water. Shrimp being thawed in standing water on top of triple sink. Chef moved to inside sink and turned on water. **Corrected On-Site**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Butter 41-48°F - Cold Holding) over stacked above cold holding line. Chef stated in cooler less than 1 hour and removed over-stacked portion. Retested butter 42-43F. **Corrected On-Site**
Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Quinoa (56-60) at 11:15°F - Cooling in plastic wrapped portions in lederhosen container. Chef stated was made at 8:30am. Retested quinoa 52-56F at 12:15pm and at current rate would not reach 41F within required time. Chef spread out quinoa on sheet pan and moved to freezer to quick chill. Retested quinoa 46F at 1:30pm. **Corrective Action Taken**
Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Plastic container stored in hand sink in back prep room area. Chef removed Container. **Corrected On-Site**
Intermediate - Spray bottle containing toxic substance not labeled. Spray bottle with sanitizer not labeled by cook line. Chef I had spray bottle labeled. **Corrected On-Site**
