Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed employee wearing watch while cutting meat at prep table kitchen area. **Warning**
Basic - Equipment in poor repair. Observed freezer not working, operator stated that it stopped working last night at 7pm. Observed in walk in freezer black beans (55°F - Cold Holding); raw chicken (50°F - Cold Holding); cooked plantains (52°F - Cold Holding); raw fish (49-50°F - Cold Holding); raw pork (51°F - Cold Holding) **Warning**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Observed in walk in freezer black beans (55°F - Cold Holding); stored at walk in freezer at 7pm. Observed in walk in cooler cooked boneless chicken (49°F - Cold Holding); cooked chicken wings (46-47°F - Cold Holding); Stored in walk in cooler between 8:30-9pm on 07/12/18 stated the operator Holding); cooked beef steak (54°F - Cold Holding) stored at walk in cooler on 07/12/18 at 7pm stated the operator. **Warning**
Intermediate - Handwash sink not accessible for employee use at all times. Observed a tall container in front of the handwashing sink at the cookline. Observed operator removed the container in front of the sink. **Corrective Action Taken** **Warning**
