A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35B-13-4    Basic - Screening is not 16-mesh to the inch. Screen on back door is larger than 16 mesh and there is a hole on bottom.
25-33-4    Basic - Single-use containers (boxes and/or cans) reused for the storage of food. Broccoli placed back in box after cutting and cleaning. Also, plastic jug cut in half being used as a scoop. Manager discarded both. **Corrected On-Site**

21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Several towels in kitchen area. One towel under cutting board. Also, sanitizer buckets stored on floor. All towels placed in bucket and buckets picked up off floor. **Corrected On-Site** **Repeat Violation**
08B-02-4    High Priority - Displayed food not properly protected from contamination. Crackers, onions and sauce on buffet without overhead protection. Also, pork uncovered in walk in freezer and ginger on floor. Manager moved items in buffet under sneeze guard, covered pork and picked up ginger. **Corrected On-Site** **Repeat Violation**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. In walk in freezer: pan of raw chicken over pan of raw beef. In reach in cooler: pans of raw fish over mayo and sauce. 22-30-4    Intermediate - Food contact surfaces soiled with accumulation of food residue and or mold like substance. On cookline: Interior of two reach in make tables. Interior of oven. 31A-03-4    Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Scrub pad in handsink at entrance of kitchen. Removed. **Corrected On-Site**
