Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-43-4    Basic - Food stored in a room/shed that is not fully enclosed. Observed a reach in cooler outside with raw shell eggs and milk stored inside . There is a awning over the reach in Cooler . **Warning**
10-12-4    Basic - In-use ice scoop stored on soiled surface between uses. Observed ice scoop on top of ice tray at the service station . **Warning**
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Observed tongs hanging from the oven door handle . Operator removed the tongs . **Corrected On-Site** **Warning**
29-27-4    Basic - No mop sink or curbed cleaning facility provided. Observed no mop sink in the restaurant. **Warning**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wiping cloth on counter by the mixer . This is a repeat violation from 03/30/2018. Discussed with operator about requiring that all wet towels be kept in bucket. . **Repeat Violation** **Warning**
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed a cook touch a ham and cheese omelette with his bare hand . **Warning**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed ham 45°F, and Butter 45°F , and Cheese 45°F in the grill reach in cooler . This is a repeat violation from 03/30/2018, and 09/06/2017 Discussed with operator about using ice to help keel his potentially hazardous products at 41*F° **Repeat Violation** **Admin Complaint**
07-08-4    High Priority - Potentially hazardous (time/temperature control for safety) food re-served to customers. Observed butter containers on the table not removed between guests , this is a repeat violation from 03/30/2018. Discussed with operator , and the operator states he will be using a non butter substitute. **Repeat Violation** **Warning**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Observe raw salmon over ham in the walk in cooler . **Warning**
16-35-4    Intermediate - No chlorine chemical test kit provided when using chlorine sanitizer at three-compartment sink/warewashing machine. Observed no test kit for chlorine dish machine. **Warning**
53B-05-5    Intermediate - Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. All the food safety handling cards are expired as of September 2018. **Warning**
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Observed unlabeled chemical bottle at the three compartment sink. **Warning**
