Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-32-4    Basic - Food being prepared outside evidenced by a prep area set up behind the MFDV under a fabric like material with a heavily soiled table set up. On the table was a sheet of foil, 2 empty baked bean cans a can opener and a soiled knife. There is a wire shelf with spices, mustard and hot sauce. Food is also being stored and prepped in a unapproved trailer evidenced by whole rotisserie chickens on a table cooked with 5-6 of them with the meat pulled off. Operator removed the remaining chickens and placed them on heat, bread on a counter and a package on the floor, sauce stored on the floor. This trailer is presently not licensable. **Admin Complaint**

51-06-4    Basic - Mobile food dispensing vehicle connected to utilities on more than a temporary basis. Unit is hard wired from light pole. Operator utilizing a walk in cooler for cold hold. Operator has cleaned out coolers and will be purchasing ice from an approved source to cold hold. **Corrective Action Taken** **Warning**

12A-02-4    High Priority - Server handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands.
