which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - - From initial inspection : High Priority - All potentially hazardous (time/temperature control for safety) foods in walk-in cooler cold held at greater than 41 degrees Fahrenheit. 1) Air blowing 58°: time temperature foods overnight in cooler; 54° ribs cooked, 52° raw beef cubes, 51° raw chicken, steak raw 52°, milk 52°, cut lettuce 50°, heavy cream 52°, whole eggs 52° stop sale. Moved to chest freezer all TCS foods that are delivered today. Also all TCS foods that are prepped today. **Warning** - From follow-up inspection 2018-09-25: 1)Walkin cooler1, air blowing at 54°, repairman changed a part and left at 2:30 pm to pick up another part. Time now 4:25pm. employees placed raw whole marinated chicken 53° inside walkin cooler, 1 hour ago at 3:30pm, time now 4:50 pm. Move to freezer-corrected action, **Admin Complaint** - From follow-up inspection 2018-09-26: 1)walkin cooler1 just had mechanic finish placing new parts inside, no food inside, time extensions.
Walkin cooler 2, needs parts as well. **Time Extended** - From follow-up inspection 2018-09-27: Black beans in walkin cooler1 at 39°.
