Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-37-4    Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas or bathroom. Kitchen, ware washing, and cook line ceiling tiles are unsealed. 40-06-4    Basic - Employee personal items stored in or above a food preparation area. Employee phone on prep table on cook line, employee removed. **Corrected On-Site**
16-46-4    Basic - Old labels stuck to food containers after cleaning. On clean dish ware shelves; sanitized containers have old stickers and adheasive residue. Manager instructed employee to clean, he began. **Corrective Action Taken** **Repeat Violation**
29-08-4    Basic - Plumbing system in disrepair. Three compartment sink sanitizer sink leaks when in operation, Sprayer at dish machine hangs into sink when not hung, **Repeat Violation**
23-05-4    Basic - Soil residue build-up on nonfood-contact surface. Cabinet in dining room has has a build up of a mold-like substance and water. **Repeat Violation**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. In walk-in cooler, items prepared over night, delivery arrived before inspection and was being unloaded. Walk-in cooler was propped open. Manager moved products to walk-in freezer to rapidly chill. peas (46°F - Cold Holding [retemp after 30 minutes 39°F]); pot roast (47°F - Cold Holding [36°F]); carrots (44°F - Cold Holding [33°F]); pork (50°F - Cold Holding [41°F]). **Corrected On-Site**
22-55-4    High Priority - Pots or other cooking equipment not being sanitized. Employee ware washing, and using the three compartment sink, washing and rinsing utensils without sanitizing step. Manager instructed employee to fill sanitizer sink and pull all items hung to sanitize, he complied. **Corrected On-Site**
08A-02-5    High Priority - Raw animal food stored over or with ready-to-eat food in walk-in freezer - not all products commercially packaged. Opened raw fish stored on top of ready to eat blueberries in walk-in freezer. Manager moved berries to top shelf. **Corrected On-Site** **Repeat Violation**
41-27-4    High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Prep area bucket, Sanitizer Bucket (Chlorine 200+ppm). Manager instructed employee to remake, 100 PPM **Corrected On-Site** **Repeat Violation**
53B-01-5    Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. No employee certificates available, no employees have certificates on them. Training class is scheduled for next week.
