Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-02-4    High Priority - Displayed food not properly protected from contamination. Plastic case for pizza display at front counter. Pizza were also placed on top of cases with no cover, manager removed pizzas to back counter **Corrected On-Site**
22-38-4    High Priority - No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Establishment currently doesn't have chlorine or quaternary ammonium to use for sanitizer. Manager sent employee over to store to grab unscented bleach to use. Employee brought back bottle to use for sanitizer **Corrected On-Site**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Make table top: sausage 49°, beef 48°, ricotta 46°,spinach 45°. Manager stated none of these items were recently prepped **Repeat Violation**
22-25-4    Intermediate - Accumulation of encrusted food debris on/around mixer head. Bowl, spinner and head soiled. Manager stated they haven't used it today and that they clean it before they use it.
