A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee personal items stored with or above food, clean equipment and utensils, or single-service items. Observed employee cell phone store on food container cover.
Basic - Equipment in poor repair. Observed oven in disrepair ( oven door) According operator they only use the stove, not the oven. **Repeat Violation**
Basic - Working containers of food removed from original container not identified by common name. Observed plastic containers with salt, flour, seasoning, not identify by the common name. Operator started writing the names on them. **Corrective Action Taken**
Intermediate - Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the three-compartment sink and/or dishmachine. Observed operator bought quaternary test kit when using chlorine.
Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. **Repeat Violation** **Admin Complaint**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Observed cooked turkey and goat from 10/31 at 2:00 pm (according operator ). Employee placed the date on it. **Corrected On-Site**
Use of cooking equipment producing grease laden vapors/smoke with hood suppression system not operating. Notified Fire AHJ. For reporting purposes only.
