A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Several employee drink on various food prep tables throughout kitchen , COS , employee place drinks on bottom shelf of non prep table . **Corrected On-Site** **Repeat Violation**
Basic - Hole in or other damage to wall.
Wall damage by walk in freezer.
Standing water on floor at north end of cooks line .
Mold build up on wall by walk in cooler. **Repeat Violation**
Basic - In-use knife/knives stored in cracks between pieces of equipment. Knives stored between equipment on cooks line . COS employee removed knives at time of inspection . **Corrected On-Site** **Repeat Violation**
High Priority - Dented/rusted cans present. See stop sale
One can of Hunts tomatoes sauce
One can of Fi Hood Pineapple chunks
Both cans badly dented on brims of cans . **Repeat Violation**
High Priority - Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Observed employee in back prep area placing gloves on with no prior hand washing , COS , inspector went over proper glove changing and hand washing between glove changes . **Corrected On-Site** **Repeat Violation**
Intermediate - Handwash sink not accessible for employee use due to being blocked by garbage can. Employee hand wash sinks in back prep area and in sushi bar area blocked by garbage cans , both removed at time of inspection. **Corrected On-Site** **Repeat Violation**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Cooked potentially hazardous foods held over 24 hr not date marked in walk in cooler . CAT inspector went over proper food date marking on TCS , foods held over 24 hrs . **Corrective Action Taken** **Repeat Violation**
