Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-04-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Observed chicken thawing at room temperature, employee moved to sink and started running water over chicken. **Corrective Action Taken**

Observed cut lettuce (56°F - Cold Holding); cut tomato (61°F - Cold Holding) behind front counter in ice bath. Manager moved to cooler to rapid chill. **Corrective Action Taken**

Observed chicken (112°F - Hot Holding); yucca (118°F - Hot Holding) in kitchen under grill. Cook moved to oven to reheat to 165°F. **Corrective Action Taken**
08A-09-4    High Priority - Raw animal food stored over ready-to-eat food in walk-in cooler. Observed raw shell eggs stored above onions in walk in cooler.
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
