Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-02-4    High Priority - - From initial inspection : High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit, Raw chicken 55°, cooked clams 62°, in glass door cooler by the rice makers. Both items in cooler less than 4 hours. Employee moved to working cooler. Ambient air temperature 60°. Salmon 60°, cream cheese 61°, krab 60°, tuna 60°, in sushi case. Operator stated all items placed in the cooler at 12 pm, two hours ago. Moved to the reach in freezer. Cooler was not turned on. Employee plugged in the cooler. Tuna salad 57°, krab salad 57°, pasta salad 58°, octopus salad 58°, on buffet line. The line is iced however, the ice is not touching the bottom of the pans. Employee added ice. Operator stated food placed on the buffet at 12:30 and moved to working cooler. **Corrective Action Taken** **Warning** - From follow-up inspection 2019-04-10: Sushi Case: Tuna 40°, salmon 41°, krab 40°, tuna 41°. Buffet: tuna salad 38°, krab salad 40°, pasta salad 39°. Glass door cooler: clams 50°, in cooler over night. Ambient air temperature 49°(See Stop Sale) **Admin Complaint**
