Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-07-4    Basic - Cleaned and sanitized equipment or utensils not properly stored. Observed clean containers under the slicer table.

12B-12-4    Basic - Employee beverage container in a food preparation/clean dishware area does not have a lid and a straw or equivalent dispensing mechanism to prevent hand contact with lip contact area of drink container. Observed employee drinking water in the prep area.

10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed spoons stored in standing water by the prep table. **Repeat Violation**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board.
22-19-4    Basic - Interior of microwave soiled with encrusted food debris by front counter.
14-31-4    Basic - Nonfood-grade bags used in direct contact with food. Observed raw beef and bread stored in thank you bags front counter. **Repeat Violation**
36-70-4    Basic - Objectionable odor in establishment. By back door.
06-04-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Observed raw beef thawing at room temperature. Operator placed inside reach in cooler. **Corrective Action Taken**
08A-26-4    Basic - Raw animal food stored above unwashed produce. Observed raw chicken over pepper, onions in the reach in cooler in front of the kitchen, and reach in cooler by the principal door.

12A-27-4    High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed employee cracked eggs in to a bowl and then touched tong to fried bacon after touched spatula to continue cooking.
12A-05-4    High Priority - Employee used tobacco, ate, or drank then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee cutting cilantro eating and drinking and the continued cutting cilantro without washing hands.
12A-20-4    High Priority - Employee washed gloves. Cook rinsed black gloves at the mop sink and then moved over to the hand washing sink and continued to rinse gloves. Coached cook, she washed hands at the hand washing sink..
01B-07-4    High Priority - Food with mold-like growth. See stop sale. Observed 3 moldy raw tomatoes in the reach in cooler by the principal door of the kitchen. During the inspection employee discarded them.
08A-11-4    High Priority - Raw animal food stored over canned/bottled drinks. Observed raw beef over bottle tea in the reach in cooler by the principal door.
08A-03-5    High Priority - Raw animal food stored over or with ready-to-eat food in reach-in freezer - not all products commercially packaged. Observed raw beef and fish over ready to eat food with no package in reach in cooler by prep table.

08A-18-5    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in reach-in freezer - all products not commercially packaged. Observed raw fish under raw chicken without packages.

Observed raw beef and fish over chicken empanadas, croquettes with no package in reach in freezer by prep table.

02C-03-4    Intermediate - Commercially processed ready-to-eat, potentially hazardous (time/temperature control for safety) food opened and held more than 24 hours not properly date marked after opening. Observed Swiss cheese, American cheese, Mozzarella cheese opened and with no label, as per operator it has been open more than 24 hours.
