Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

16-55-4    Basic - Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed chlorine 0 ppm.
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed in dishwashing area.
16-13-4    Basic - Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. Instructed employee and set up three compartment sink. **Corrected On-Site** **Repeat Violation**
08B-12-4    Basic - Food stored in holding unit not covered. Observed ice in ice bin used for dinking water.
10-08-4    Basic - Ice scoop handle in contact with ice. Observed in ice bin used for drinking water, serving station.
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Observed in oven, kitchen area.
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed in kitchen area. **Corrected On-Site**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
01D-01-4    High Priority - Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded. Observed salmon carpaccio in menu.
