Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

29-18-4    Basic - Drain cover missing in the ware wash area under the three compartment sink.
14-33-4    Basic - Dry storage shelves with rust that has pitted the surface.
36-22-4    Basic - Floor area covered with standing water next to the ice machine near the cook line.
14-70-4    Basic - Ice buildup in walk-in freezer. **Repeat Violation**
32-17-4    Basic - Self-closing device on bathroom door disconnected/broken in the women's bathroom.
12A-27-4    High Priority - Employee cracked raw shell eggs and then handled utensils without washing hands. Instructed employee and manager on proper hand washing technique. **Corrective Action Taken**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed shredded cheddar cheese (48°F) Guacamole (51°F) and sour cream (48°F) on ice on the cook line. Manager stated that the items had been on the line for one hour. Manager was instructed to place the items in the reach in cooler. **Corrective Action Taken**
41-01-4    High Priority - Spray bottle with chemical/toxic substance stored near/on/above food preparation surface or food. Observed spray bottle containing cleaning fluid stored with food under preparation table. Manager removed. **Corrected On-Site**
22-07-4    Intermediate - Slicer blade guard soiled with old food debris. Manager removed and sanitized. **Corrected On-Site**
