Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Hair nets were put on. **Corrected On-Site**
36-41-4    Basic - Fan cover in walk-in freezer And walk in cooler has accumulation of dust or debris.
36-22-4    Basic - Floor area(s) covered with standing water. Walk in cooler.
08B-30-4    Basic - Food stored in dry storage area not covered. Observed tortillas and croutons uncovered. Manager covered them **Corrected On-Site**
36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment. Kitchen area.
14-42-4    Basic - Hood filter missing from automatic fire suppression/exhaust system.
10-12-4    Basic - In-use ice scoop stored on soiled surface between uses. Observed soiled ice scoop holder.
22-19-4    Basic - Interior of microwave soiled with encrusted food debris. Kitchen area. Microwave was cleaned. **Corrected On-Site**
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Inside walk in cooler in front of ware washing area.
51-18-6    Basic - No copy of latest inspection report available.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. In some areas in ware washing area.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Dish machine in bar area reading Chlorine 0 ppm. Manager fixed the machine and was reading Chlorine 100 ppm. **Corrected On-Site**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed cut tomatoes (50°F - Cold Holding); cut lettuce (50°F - Cold Holding) Manager put both items inside walking freezer for rapid cooling. **Corrective Action Taken**
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
31A-03-4    Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Observed pan divider in hand wash sink. Manager removed pan divider. **Corrected On-Site** **Repeat Violation**
