A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Observed employee drink stored above clean dishes. The cup was moved below. **Corrected On-Site**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.
Observed chicken salad 49°, tuna salad 49°, egg salad 49° in the prep line reach-in cooler. Items were discarded. **Corrective Action Taken**

High Priority - Toxic substance/chemical stored by or with clean or in-use utensils.
Observed quaternary amonia tablets stored over clean equipment. It was moved to cleaning. **Corrected On-Site**
Intermediate - Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit.
Observed Ambient air thermometer reading 22° in a 49° reach-in cooler.
Intermediate - Ice chute soiled/build up of mold-like substance/slime.
Observed the shroud in the ice machine has dark foreign substance on the left edge.
ALSO, the can opener was soiled. The can opener was moved to dish. **Corrective Action Taken**
Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
Observed lack of proof of training for employees over 60 days.
Intermediate - No soap provided at handwash sink.
Observed lack of soap at the hand wash sink near the office.
ALSO, this hand wash sink lacked a sign. Soap and sign were added. **Corrected On-Site**
