Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-70-4    Basic - Ice buildup in walk-in freezer on the ceiling and the racks. **Repeat Violation**
10-01-4    Basic - In-use utensil in nonpotentially hazardous (non-time/temperature control for safety) food not stored with handle above top of food within a closed container. Observed scoop with handle resting in flour in a closed container. **Repeat Violation**
29-49-5    Basic - Observed standing water in bottom of reach-in cooler, beer cooler in the bar area.
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Observed sausage held on the steam table at 115°F. Manager stated the sausage had been heat up for one hour. Manager was instructed to removed the sausage and heated to 165°F. **Corrective Action Taken**
41-01-4    High Priority - Spray bottle with chemical/toxic substance stored near/on/above food preparation surface or food. Observed spray bottle containing cleaning fluid stored with food under the preparation table on the cook line. Manager removed. **Corrected On-Site**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed employee using the hand washing sink to rinse hard boiled eggs. **Repeat Violation**
