Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03B-02-4    High Priority - Cooked meats or poultry hot held at less than 135 degrees Fahrenheit or above. Observed cooked potatoes (80°F - Hot Holding) on preparation table in front flat grill, kitchen area. Manager moved to reach in cooler to cool down. **Corrective Action Taken**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed butter (individual portion) on front counter, as per Manager held for 1 hour. Butted was moved to reach in cooler. Observed fresh cheese (50°F - Cold Holding); burger (50°F - Cold Holding); cooked eggplant (50°F - Cold Holding) in reach in cooler drawers under flat grill, kitchen area. Manager moved to other cold holding unit. **Corrective Action Taken**
01B-14-4    High Priority - Shell eggs in use or stored with cracks or broken shells. See stop sale. Observed container with three units with broken shells. Employee discarded. **Corrected On-Site**
11-07-4    Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Reviewed health policy with Manager and provided Big 5 Foodborne Illnesses poster and Hepatitis A flyer. **Corrected On-Site**
