A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Equipment and utensils not properly air-dried - wet nesting. Observed chicken wings, conch, and lettuce bins stacked on top of each other on the shelf by the three compartment sink.
Basic - Food not stored at least 6 inches off of the floor. Observed containers of seasoning, and mayo on the kitchen floor by dry storage shelf. Employee placed on shelf.
Basic - Food stored on floor. Observed 2 bottles of passion fruit and strawberry liquids on the walk in cooler. Employee place on walk in cooler shelves.
Basic - Stored food not covered in reach-in freezer. Observed tater tots, cheese sticks, mushrooms, chicken nuggets, corn nuggets, macaroni and cheese, and jalapeños poppers not covered in the reach in freezer. Employee covered all containers. **Corrected On-Site**
Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed wall is soiled with drink syrup at the front counter. **Repeat Violation**
Basic - Wood food-contact surface not properly sealed. Observed ply woods under the mango, strawberry, and passion fruits frozen drinks dispensary machine. Wood is not sealed.
High Priority - Toxic substance/chemical stored by or with food. Observed a bottle of Clorox Foamer on 2nd shelf with squeeze bottles of dressing, and a box of ketchup.
Intermediate - Accumulation of mold-like substance on juice/drink dispensing nozzles/equipment. Observed mango, strawberry, and passion fruits frozen drinks inside of the dispensary machine, has mold-like substance.
Intermediate - Interior of reach-in freezers soiled with accumulation of food residue. Observed reach in freezers are soiled with accumulation of food debris.
Intermediate - Soil residue in food storage containers. Observed condiments of flour, seasoning, corn meal mix, ketchup, tartar sauce, hot sauces, and dressing containers bins has soil, accumulation of food debris, and dust.
