A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Build-up of mold-like substance on nonfood-contact surface. Handle area of the lid to the ice machine, mold like on surface, cleaned while inspection was taking place. Cleaned **Corrected On-Site**
Basic - Employee beverage in a food preparation or other restricted area.above where potatoes are being prepped. Item moved to correct storage area. **Corrective Action Taken**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Not reading at 50 ppm or higher, reading at 25 ppm chlorine. Retested after priming to 50 ppm chlorine. **Corrected On-Site**
High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Hose attached without vacuum breaker at mop sink. Hose removed for mop sink until vacuum breaker is installed
Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. 6 hourly team members on site without a manager present. Manager arrived as the inspection was taking place. **Corrective Action Taken**
Intermediate - Slicer blade soiled with old food debris. Cook did not know when last slicer was used, old food on surface. Manager arrived and had utility person clean slicer. **Corrected On-Site**
