A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-16-4    High Priority - - From initial inspection : High Priority - All potentially hazardous (time/temperature control for safety) foods in walk-in cooler cold held at greater than 41 degrees Fahrenheit. Observed- Chicken salad, corned beef ash, tuna salad, potato salad, tomato sauce, ham, pastrami, cooked ribs, cooked shredded beef, white/wild rice, meat loaf, buffalo chicken dip- 46-52. **Warning** - From follow-up inspection 2019-08-15: Observed cooling of TCS foods in walk in cooler, walk in cooler not able to maintain 41 or below. Operator advised not to store any TCS food in the walk in cooler until the unit is able to maintain 41 or below. Observed- potato salad, tuna salad, boiled potatoes cooling since 11:00 am at 44-48. Temperature taken at 4:00 pm. TCS foods have 1 more hour to cool down to 41 or below. Ambient air temperature in walk in cooler is 46-47° F. Operator stated he was unable to get a technician to do repairs on walk in cooler. **Admin Complaint**
