A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Coffee filters not stored in a protected manner to prevent contamination. Observed unprotected coffee filters in both coffee service areas. This is a repeat violation from 9/10/2019. **Repeat Violation** **Warning**
Basic - Employee personal items stored in or above a food preparation area. Observed employee cellphone on a shelf above tortillas by the grill. **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine sanitizer in dish machine reading 0ppm. Operator to use chlorine sanitizer in three compartment sink to sanitize all washed items until dish washing machine is repaired. Distributor delivered new container of chlorine sanitizer, dish washing machine chlorine sanitizer at 50ppm. **Corrective Action Taken** **Warning**
High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed cook crack raw eggs then prepare a sandwich without washing hands and changing gloves. Educated cook on need to wash hands after handling raw food. Cook washed hands, changed gloves and remade sandwich. **Corrected On-Site** **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed Shredded mozzarella 48°F cold holding, diced tomatoes 47°F cold holding, diced ham 49°F cold holding, shredded cheddar cheese 48°F cold holding in grill reach in cooler. High Priority - Raw animal food stored over ready-to-eat food in walk-in cooler. Observed raw steaks stored over cooked corned beef, raw shell eggs stored over milk, coleslaw, and cheddar cheese in walk in cooler. **Warning**
Intermediate - Handwash sink not accessible for employee use at all times. Observed hand washing sink by dry storage access blocked by a floor stand mixer. **Warning**
