Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-11-4    Basic - Floors not maintained smooth and durable. Observed floor in kitchen missing grout.
36-24-5    Basic - Hole in or other damage to wall. Observed wall in disrepair by back doors d mop sink.
14-70-4    Basic - Ice buildup in walk-in cooler.
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed utensils in 102°F water.
38-01-4    Basic - Light shield damaged/in disrepair. Observed broken light shield over sandwich prep area.
38-04-4    Basic - Ten (10) foot-candles of light at least 30 inches from floor not provided in walk-in cooler. Observed light out in walk in freezer. **Corrected On-Site**
36-69-4    Basic - Ventilation system inadequate as evidenced by condensation on walls/ceiling. Observed condensation on AC vent over sandwich prep area.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed a container of wheat cereal not labeled. **Corrected On-Site**
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Observed rice (116°F - Hot Holding) **Corrective Action Taken**
22-05-4    Intermediate - Cutting board(s) stained/soiled. Observed soiled white cutting board in kitchen on prep table.

31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper or drying devise in employee bathroom off kitchen.
