Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-04-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Raw chicken thawing at room temperature in back kitchen. Operator placed in rescan-in cooler at time of inspection. **Corrected On-Site**
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair. At reach-in cooler near back exit and at reach-in cooler in main kitchen.
23-09-4    Basic - Soiled reach-in cooler gaskets. Reach-in cooler near back exit.
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Reach-in cooler: milk (56°F - Cold Holding). Operator kept in reach-in cooler to ambient cool. **Corrective Action Taken**
03B-01-5    High Priority - Potentially hazardous (time/temperature control for safety) food hot held at less than 135 degrees Fahrenheit or above. Steam Table: cooked potatoes (116°F - Hot Holding). Operator began reheating at time of inspection. **Corrective Action Taken**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Raw bacon stored over empanadas in reach-in cooler. Raw shrimp stored over bananas in reach-in cooler. Operator relocated food items at time of inspection. **Corrected On-Site**
