Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-75-4    Basic - Build-up of soil/debris on the floor under shelving. Observed in walk in cooler.

08B-47-4    Basic - Food not stored at least 6 inches off of the floor. Observed raw pork container stored on walk in cooler floor. Observed pork fat and cooking stored on kitchen floor.
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit.
02D-03-4    Basic - Label on a food item prepared and packaged onsite for customer self-service does not include product identity/description, date product was packaged and name and address of the establishment that prepared and packaged the food. Observed individually packaged desserts not labeled in front counter.
29-08-4    Basic - Plumbing system in disrepair. Observed the three compartment sink leaking.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface.
25-32-4    Basic - Reuse of single-service articles. Observed gallon of milk being reused to store cocoa drink.
33-31-5    Basic - Unnecessary items/unused equipment on the premises. Observed ice machine, oven not in use.
36-02-5    Basic - Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom.
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed sugar not labeled.
46-04-4    Exit door locked. For reporting purposes only. **Corrected On-Site**
12A-17-4    High Priority - Employee rubbed hands together for less than 10-15 seconds while washing hands. Observed employee washed hands and did not rub for enough time.
10-05-4    High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit.
02D-12-1    Intermediate - High Priority - Juices packaged in the establishment that have not been specifically processed to prevent, reduce, or eliminate the presence of pathogens not bearing the warning on the label as required by the Food Code. Observed several juices in reach in cooler in front counter not labeled.

31B-03-4    Intermediate - No soap provided at handwash sink. Observed in hand sink in kitchen. **Corrected On-Site**
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Observed cooked rice not date marked inside walk in cooler. Observed cooked chicken, shredded beef not date marked inside reach in cooler.
