Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed utensils at preparation table not inverted. **Warning**
Basic - Wiping cloths used for occasional spills on tableware (utensils, plates or bowls served to the consumer) not dry and used just for that purpose. Observed wiping cloth on preparation table at kitchen area. **Warning**
Basic - Working containers of food removed from original container not identified by common name. Observed salt, lentils, cinnamon containers missing labels. **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed Mondongo soup (57°F - Cold Holding); chicken soup (57°F - Cold Holding) and cooked beans (50°F cold holding) at walk in cooler.As per manager the day before. **Warning**
High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in walk-in cooler. Observed raw chicken next the clams at reach in cooler and reach in freezer. **Warning**
High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee engaged in food preparation change duties from preparation of raw beef to cooking area without wash hands and changing gloves. **Warning**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Observed Mondongo soup (57°F - Cold Holding); chicken soup (57°F - Cold Holding) and cooked beans (50°F cold holding) at walk in cooler. As per manager the day before. **Warning**
