Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor soiled/has accumulation of debris.
Under drive through equipment. Manager began cleaning. **Corrective Action Taken** **Repeat Violation**
Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container.
Scoop for cheese and cut lettuce on main make line. **Repeat Violation**
Basic - Operator does not permit customers to use bathroom.
Restroom blocked off with signs stating they are closed. Signs removed and table moved to allow access. **Corrected On-Site**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Two live flies observed in kitchen area. **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Four containers of cut lettuce stored below main make line and additional container of cut lettuce on make line 48°F. All mix placed out approximately 3 hours prior. All containers moved to walk in cooler to cool.
On main make line, container of blue cheese crumbles 46°F and container of sliced cheese 48°F. Items placed on line approximately 3 hours prior. Item moved to walk in cooler.
In cooler drawers below grill, two pans of raw chicken 52°F. Chicken placed in drawers approximately two hours prior. Items moved to walk in cooler to cool. **Warning**
Intermediate - Handwash sink not accessible for employee use due to being blocked.
Hand washing sink by chicken breading station in kitchen is blocked by flour container and sanitizer bucket. Items moved. **Corrected On-Site**
Intermediate - Ice chute on self-service drink machine soiled/build up of mold-like substance/slime.
Both ice chutes in dining area. **Repeat Violation**
