A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Insect control device installed over food preparation area.
Bug zapper light installed over a rack of bread next to the managers office. Manager disconnected light. **Corrective Action Taken** **Warning**
Basic - Time/temperature control for safety food thawed at room temperature.
Multiple bags of plain custard mix thawing at room temperature by three compartment sink. Manager placed mixes in walk in cooler. **Corrected On-Site** **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Observed approximately 6 live small flying insects by prep station near non working cook line. **Warning**
High Priority - Roach activity present as evidenced by live roaches found.
Observed 4 live roaches between the drive thru and custard station, and 3 live roaches on cook line. **Admin Complaint**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Raw beef 45°F in small flip top cooler next to flat grill on cook line. Manager stated she placed the beef in the cooler from the walk in a few minutes ago. Manager placed a bag of ice on top of raw beef. **Corrected On-Site** **Warning**
High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb.
No vacuum breaker at hose bibb outside of establishment. Hose bibb located right ousted the main entrance door. **Warning**
Intermediate - Handwash sink not accessible for employee use at all times.
Handwash sink in custard station inaccessible to employees due to broken pipes under the sink. **Warning**
