A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed pans not inverted on a shelf at dishwasher machine area.

Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. At dishwasher machine area. **Repeat Violation**
Basic - Outdoor refuse area not curbed and graded to drain. Observed greasy and water accumulation at mop sink area outside of the establishment back door. **Repeat Violation**
Basic - Single-service articles not stored inverted or protected from contamination under preparation table at oven area.
Manager inverted the single service articles. **Corrected On-Site**
Basic - Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom. Observed unsealed floor throughout the kitchen area and dishwasher machine area.
High Priority - Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed chlorine sanitizer at +200 ppm at three compartment sink.
Manager put water to reduce the concentration. Final concentration 100ppm. **Corrected On-Site**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dishwasher machine at 0 ppm.
High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed raw beef over raw fish and raw beef next to raw chicken.
Manager moved the products to the correct order in the walk in freezer.. **Corrected On-Site**
High Priority - Time/temperature control for safety food hot held at less than 135 degrees Fahrenheit or above. Observed fried rice (124°F - Hot Holding) at stove. As per manager for less than two hours.
Manager moved the rice to reheating at 165°F. **Corrective Action Taken**
High Priority - Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed wiping chlorine solution at +200 ppm.
Manager changed the solution. Final concentration 100 ppm. **Corrected On-Site**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed deserts not properly date marked at front counter. **Repeat Violation**
