Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Walk-in cooler/freezer shelves with rust that has pitted the surface. Walk-in cooler gasket torn/in disrepair. Hood filter missing from automatic fire suppression/exhaust system.
21-05-5    Basic - Cloth used as a food-contact surface. Observed fried onions cooling on cloth napkins and rice cooking in rice net. **Repeat Violation**
13-03-4    Basic - Employee with no hair restraint while engaging in food preparation.
08B-38-4    Basic - Food stored on floor. Observed boxes of shrimp on walk in freezer floor.
33-11-4    Basic - Missing drain plug at dumpster. **Repeat Violation**
29-20-5    Basic - Standing water or very slow draining water in handwash sink, three-compartment sink, or mop sink. Cook line floor drain.
08B-12-5    Basic - Stored food not covered. Observed open container of ice cream and cheese cake. Employee put boxes of shrimp on the shelves. **Corrected On-Site**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed 10 ppm.
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Observed raw salmon over unwashed cabbage in walk in cooler and raw beef over prepped vegetables in reach in cooler. Operator stored raw meats properly. Corrected on site. Raw animal food stored over ready-to-eat food. Observed raw chicken wings over rice noodles in walk in cooler. Operator placed raw chicken below rice noodles. **Corrected On-Site** **Repeat Violation**
41-10-4    High Priority - Toxic substance/chemical improperly stored. Observed spray bottle on dry storage shelf.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Employee washed wet wiping cloth at hand wash sink.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
53B-01-5    Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Operator stated books were ordered but waiting for delayed delivery due to Covid19. **Repeat Violation**
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Bleach.
