A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
High Priority - Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded. Establishment offers sushi rolls with ahi-tuna, himachi, king salmon and spicy tuna.

High Priority - Time/temperature control for safety food held using time as a public health control marked with a time that exceeds the 4-hour limit. See stop sale. Sushi rice prepared at 5:41 am on 11/17/20 from production kitchen. Discussed with the operator and provided the Time As A Public health Control form to the operator. As per operator, new rice is delivered every 4 hours to food truck.

Discussed with the operator and provided the Time As A Public health Control form to the operator. As per operator, new rice is delivered every 4 hours to food truck.
Intermediate - Hot water not provided/shut off at employee handwash sink and three compartment sink. Observed plumber working on the food truck water heater and shut off the water supply. Plumber turned the water back on, hot water at all sinks, temp temperature 101°F-103°F. **Corrected On-Site**
