A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas.
Observed throughout the kitchen. **Warning**
Basic - Ceiling/ceiling tile shows damage or is in disrepair. Observed in dry storage room and dining room area.
Whole in ceiling above the reach in cooler by the hand washing sink. Employee replaced tiles in dry storage. **Corrective Action Taken** **Warning**
Basic - Dead roaches on premises. Observed 4 dead roaches under reach in cooler by hand wash sink. Operator removed roaches during time inspection **Warning**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed water bottle on prep table. Operator removed the Water bottle during time of inspection. **Corrected On-Site** **Warning**
Basic - Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. Employee was washing and sanitizing dishes no rinsing. Instructed employee how to properly set up a three compartment sink. **Corrective Action Taken** **Warning**
High Priority - Chlorine sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Tested 25ppm than employee added chlorine retested 50 ppm. Employee instructed to re sanitize dishes. Employee re washed dishes. **Corrected On-Site** **Warning**
