Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed rice in back dock in 3 containers not labeled with common name of product and observed 2 containers of flour and MSG in dry storage not properly marked with common name. 01B-01-4    High Priority - Dented/rusted or bulging cans present. See stop sale. Observed 2 cans of thick soy sauce (Koon Chun Brand (Weight 5.25 pounds each) bulging and rusted. Observed 2 cans of Hoisin Sauce (Koon Chun(Weight 5 pounds each)) with heavy dents along seams. Observed 1 can of Soy sauce (Gold Label(3cpints 15 fluid ounces)) dented along seams. Observed 1 can of Apple Filling (Globe (Weight 7 pounds)) dented on seams. Observed 3 cans of Strawberry Glaze (Sysco (Weight 7 pounds 8 ounces each)) with heavy rusting of can. **Warning**
08A-05-6    High Priority - Raw animal food stored over ready-to-eat food. Observed walk-in cooler with raw chicken above cooked noodles, raw pork stored above produce (onions, greens) and raw chicken stored above produce (onions, carrots). Operator removed cooked noodles and stored above all ready to eat products and removed the raw chicken and raw pork and stored according to cooking temperature with other raw meats on shelves. **Corrected On-Site** **Repeat Violation** **Warning**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed make table 2 - pork (54°F - Cold Holding); raw chicken (54°F - Cold Holding); yellow rice (51°F - Cold Holding); dumplings (48°F - Cold Holding); wontons (49°F - Cold Holding) with all items above 41°F. Per operator items were stocked up at 11 am. Operator removed all Items and stored in cooler to rapidly cool. **Corrective Action Taken** **Repeat Violation** **Warning**
