Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Cutting board on deli reach in cooler has grooved cutting board marks. **Repeat Violation**
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee water bottle on prep table. Employee discarded water bottle. **Corrected On-Site**
12B-02-4    Basic - Employee eating in a food preparation or other restricted area. Employee eating in walk in cooler.

25-35-4    Basic - Reuse of single-use articles. Egg crate used for utensil storage on top of smoker.
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. On shelf on cook line. Employee turned single serve over. **Corrected On-Site** **Repeat Violation**
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Leaking sink in bathroom.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Wet mop stored in bucket of water.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Wet wiping cloth on cook line not stored in sanitizer bucket. Employee moved wet cloth to sanitizer bucket. **Corrected On-Site**
14-06-4    Basic - Wood food-contact surface not properly sealed. Home made chicken rake on top of smoker made from wood not sealed and metal. **Repeat Violation**
08A-05-6    High Priority - Raw animal food stored over ready-to-eat food. Raw shrimp stored over cooked peas and carrots. Employee moved shrimp to lower shelf. **Corrected On-Site**
35A-04-4    High Priority - Rodent activity present as evidenced by rodent droppings found. 2 rodent droppings on shelf under rice cooker, 4 rodent droppings under wok cook line, 2 rodent droppings behind reach in deli cooler, 4 rodent droppings under dry storage shelf, 3 rodent droppings on stairs leading to upstairs, 3 rodent droppings upstairs near wall under duct work, 3 rodent droppings in pan under hot water tank, 1 rodent dropping on lid of plastic container near water heater, 2 rodent droppings under hot water heater on floor, 4 rodent droppings under cooking oil container in rear storage area near reach in freezer. **Repeat Violation**
35A-18-4    High Priority - Rodent rub marks present along walls/ceilings. Rub marks along wall and pipe by water heater and rear mop sink area.
11-07-5    Intermediate - Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Inspector emailed Big 6 packet. **Corrective Action Taken**
22-05-4    Intermediate - Cutting board(s) stained/soiled. Cutting boards stained. Can opener soiled with food debris.
12A-03-4    Intermediate - Employee washed hands in a sink other than an approved handwash sink. Employee washed hands in three compartment sink. Discussed with employee good hand washing practices. **Corrective Action Taken**
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Spray bottle in storage area containing cleaner not labeled.
