Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-07-4    Basic - Gaskets with slimy/mold-like build-up. All coolers gasket. **Repeat Violation**
14-69-4    Basic - Ice buildup in reach-in freezer. Located next to the make table in the kitchen area.
10-08-5    Basic - Ice scoop handle in contact with ice.
22-08-4    Basic - Interior of oven has heavy accumulation of black substance/grease/food debris.
14-67-4    Basic - Reach-in cooler gasket torn/in disrepair. Standing cooler by prep area.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. **Repeat Violation**
23-09-4    Basic - Soiled reach-in cooler gaskets. Make table located in the kitchen area. **Repeat Violation**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. **Repeat Violation**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Located on top of counter next to the hand washing sink in the kitchen area.
14-31-5    High Priority - Nonfood-grade bags used in direct contact with food. Observed raw lamb stored inside a thank you inside the standing cooler in the prep area. **Repeat Violation**
22-05-4    Intermediate - Cutting board(s) stained/soiled. **Repeat Violation**

31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Located in the kitchen area. **Corrected On-Site** **Repeat Violation**
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked chickpea soup stored inside walk in cooler with no date mark. As per owner soup was prepared yesterday morning.
