Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Food not stored at least 6 inches off of the floor.
Observed container of tomato sauce stored on floor in kitchen and container of flour stored on floor in back kitchen area.
Basic - Working containers of food removed from original container not identified by common name.
Observed containers containing different sauces not labeled.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Reach in cooler across from cook line-yellow shredded cheese (48°F - Cold holding)
High Priority - Time/temperature control for safety food hot held at less than 135 degrees Fahrenheit or above.
Cook line-cooked fries (68°F - hot-holding at room temperature )
Operator added time mark at time of inspection,advised operator to add fries to written procedures.
Intermediate - Handwash sink not accessible for employee use due to being blocked by by large pot of cooking oil.
Also observed lids stored inside hand sink on front counter.

Observed pizza with time marked, no written procedures provided.

Observed cooked pasta inside walk in cooler not date marked, cooked on previous days.
Propane tank (larger than 2.7 lb. water capacity/1 lb. gas capacity) located inside of the building. For reporting purposes only.
