A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee eating in a food preparation or other restricted area. Observed employee eating at a prep table where pork bellies are being prepped. Instructed employee to go to an approved area to eat. **Corrected On-Site** **Warning**
Basic - Floor area(s) covered with standing water near the back door of the kitchen and behind the prep table near the walk-in cooler. Per the manager a pump for condensation was up unplugged. **Warning**

High Priority - Stop Sale issued due to adulteration of food product. Accumulation of black/green mold-like substance in the interior of the ice machine. Observed water dripping over the ice deflector with the mold- like substance and onto the ice. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Observed in the flip top cooler, shredded lettuce (55°F - Cold Holding); sliced tomatoes (56°F - Cold Holding). Per the manager the items were prepped 30 minutes prior. Items moved to the lower portion of the cooler to quick chill. **Corrective Action Taken** **Warning**
High Priority - Time/temperature control for safety food hot held at less than 135 degrees Fahrenheit or above. Observed on the steam table, shredded beef (115°F - Hot Holding) - reheated to 178°f. **Corrected On-Site** **Warning**

Observed water dripping over the ice deflector with the mold- like substance and onto the ice. Employee removed ice and cleaned and sanitized the machine.
