Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-02-5    High Priority - 1.) Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Walk In Cooler: feta cheese (47°F - Cold Holding); sliced ham (47°F - Cold Holding); sliced turkey (47°F - Cold Holding). Per operator held in unit overnight and not moved. Observed ambient temperature of unit at 42-52F°. Advised operator to not store any TCS foods in unit until it can maintain at 41°F and below. See Stop Sale. 2.) shredded mozzarella (46-48°F - Cold Holding); butter (47°F - Cold Holding); hard boiled eggs (47°F - Cold Holding); ham roast (47°F - Cold Holding); turkey roast (47°F - Cold Holding); raw chicken (45°F); raw beef (46°F - Cold Holding); milk (47°F - Cold Holding) Observed at 1:08pm. Operator stated these items were received from their truck order this morning at 10am. Operator transferred items to alternate cooler. Corrective action taken. Observed ambient temperature of unit at 42-52F°. Advised operator to not store any TCS foods in unit until it can maintain at 41°F and below. **Warning**
08A-05-6    High Priority - Raw animal food stored over ready-to-eat food. Observed container of raw chicken in walk in cooler stored over diced raw red and green peppers. Operator removed and stored properly. **Corrected On-Site** **Warning**
