A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee drinking from an unenclosed beverage container in a food preparation/clean dishware area and the container does not have a dispensing mechanism to prevent hand contact with lip contact area of drink container. Employee's Beverage container with no lid on storage shelves at prep area.
Basic - Equipment in poor repair. Reach in cooler next to steam table at cook line. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired.
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw chicken Milanese and steak Milanese on top of cheese in reach in cooler located at cook line. Manager placed cheese on top and raw animal food on the bottom. **Corrected On-Site**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw beef (55°F - Cold Holding); raw chicken (52°F - Cold Holding); Raw chicken (53°F - Cold Holding); Raw steak (48 °F - Cold Holding); Cut tomatoes (48 °F - Cold Holding), reach in cooler located next to the steam table at cook line. As per manager and employee held for less than 4 hours. Employee stored food in ice bath.
Coached operator to place products on ice bath with food products at the same level as the ice bath.
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Ham, Chicken, fish croquettes (129°F - Hot Holding), hot holding unit at front counter. As per employee for less than 4 hours. Employee reheating food.
