A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. 1)Observed handles of utensil in use touching cornmeal, flour, and rice. 2) Observed in use utensils stored in container touching sugar. **Warning**
22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed oven and stove heavily soiled with grease build up and food debris. **Repeat Violation** **Warning**

21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth stored on prep shelf in front of microwave. **Warning**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed all working containers with flour, rice, beans, sugar not labeled under prep table in kitchen **Warning**

Operator increase heat. Corrective action 2) Observed sautéed onions at 116°F, boiled plantains 106°F and boiled eggs 106°F on shelf next to cook line. 11-01-5    Intermediate - Certified Food Manager or person in charge failed to notify the division of employee diagnosed with Norovirus, Hepatitis A, Shigella spp., Shiga toxin-producing Escherichia coli, Typhoid fever (caused by Salmonella Typhi) or Salmonella (nontyphoidal).
