A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Mobile food dispensing vehicle service opening not kept closed except during food service.
All windows and door for vehicle were open without guests present. Windows and door closed. **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
Area under grill.
Storage cabinets under grill. **Repeat Violation**
Basic - Wet wiping cloth not stored in sanitizing solution between uses.
Wiping cloth near triple sink. Cloth placed in sanitizer bucket. **Corrected On-Site**
High Priority - Displayed food not properly protected from contamination.
Serving window was open where food cooking on grill was not protected. Windows closed. **Corrected On-Site**
High Priority - Establishment operating without an approved sewage system.
Vehicle has no wastewater tank permanently affixed to vehicle and is using a portable caddy. **Warning**
High Priority - Raw sewage on ground of establishment.
Vehicle has a portable blue caddy under wastewater tank. Waste water flows from waste water tank into blue caddy. Caddy is overflowing and wastewater is following onto the concrete under and in front of vehicle where customers stand. **Warning**
Intermediate - Sink compartments of three-compartment sink too small to accommodate utensils or equipment.
Vehicle has large containers that will not fit in triple sink. Vehicle commissary does not have adequate ware washing facilities.
