Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Observed a mold like substance in the ice machine.
16-21-4    Basic - Accumulation of debris on exterior of warewashing machine. Observed buildup of debris on top of dish washing machine. This is a repeat violation from 2/26/2021. **Repeat Violation**
36-37-5    Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. Observed ceiling tiles in kitchen not smooth and easily cleanable. This is a repeat violation from 2/26/2021. **Repeat Violation**
10-20-4    Basic - In-use tongs stored on equipment door handle between uses. Observed tongs hanging from oven door handles. This is a repeat violation from 2/26/2021. **Repeat Violation**
25-05-4    Basic - Single-service articles improperly stored. Observed coffee filters stored unprotected in both servers areas. This is a repeat violation from 2/26/2021. **Repeat Violation**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed a black mold like substance on the wall behind the dish washing machine. This is a repeat violation from 2/26/2021.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine sanitizer in the dish washing machine 0ppm. Operator can wash dishes in the dish washing machine but must sanitize in the three compartment sink until the dish washing machine is repaired. **Corrective Action Taken**
12A-19-4    High Priority - Employee washed hands with cold water. Observed an employee enter kitchen from outside wash hands with cold water only. Inspector spoke with employee about proper hand washing procedures. **Corrective Action Taken**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Hand washing sink in service area used as a dump sink, observed ice in sink.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Cooked meatloaf in the walk-in cooler not date marked. Per operator the meatloaf was prepared more than 24 hours ago.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Observed an unlabeled chemical spray bottle in the dish washing area.
