Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed mold-like build up on double door cooler.
25-06-4    Basic - Single-service articles not stored inverted or protected from contamination. Observed Togo containers stored above dishes not inverted. Operator had employee invert items. **Corrected On-Site**
29-49-6    Basic - Standing water in bottom of reach-in-cooler. Observed some standing water in bottom of double door with egg.
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw Philly, raw hamburger, raw sausage stored above raw pork in double door by flattop. Operator removed and stored items below pork and stored pork above. **Corrected On-Site**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed make table - mushrooms from package (46°F - Cold Holding); diced ham (48°F - Cold Holding);. Per operator items were moved from walk-in cooler to unit at 8 am. Operator removed items and stored in cooler to rapidly cool. Observed follow up temperatures at 41°F and 40°F respectively. **Corrected On-Site**
03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Observed eggs stored above cook line not time marked appropriately. Operator had employee time mark with discard time and time removed from storage. **Corrected On-Site**
