Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-01-4    Basic - Employee eating while preparing food. Observed bottle water on cooks line. I asked the operator what it was for and operating stated they were drinking the water. Operator throughout the bottle water. **Corrected On-Site**
13-07-4    Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed watches and wrist bans on multiple employees. Operator informed employees on proper protocol for jewelry. **Corrective Action Taken**
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Observed no Handwashing sign on all employee Handwashing sink. Operator put Handwashing signs on all Handwashing sinks **Corrected On-Site**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed soiled gaskets on all reach in cooler,Walk-in cooler and Reach in freezer.
21-10-4    Basic - Soiled dry wiping cloth in use. Observed cook wiping a frying pan with a dry soiled cloth. Operator stop chef and had him dispose of the soiled wiping cloth and used a clean frying pan. **Corrected On-Site**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed on cooks line by fryers. Operator moved wiping cloth to sanitizer bucket. **Corrected On-Site**
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed cook cracked shell eggs and removed gloves and put on a new pair of gloves and did not wash hands. Operator stopped the employee and had him was his hands. Instructed employee and manager on proper handwashing protocol. **Corrected On-Site**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Sliced Tomato's (45°F - Cold Holding); Sliced ham (45°F - Cold Holding); Cooked ckicken (45°F - Cold Holding) Operator stated they received a large order from food distributor and door was open for an extended period of time. I suggested to the manager to ice down or put all TCS foods in the Walk-in freezer. The manager put all TCS foods in Walk-in cooler **Corrective Action Taken**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed Handwashing sink used as a beverage dump sink. Operator educated employee's that the Handwashing sink was for Handwashing only. **Corrective Action Taken**
